Is Sourdough Bread Gluten Free

Many people think that those with gluten sensitivity, irritable bowel syndrome, or celiac disease may tolerate sourdough better than other breads because most of the gluten in sourdough bread is broken down during the process of fermentation.

And this is truethere is less gluten in sourdough bread than in regular white or wheat bread.

But, sourdough bread is not gluten free!

This is most important for those with celiac disease to be aware of, because consuming any gluten at all can be very dangerous.

If you do not have celiac disease, going gluten free can actually cause more harm than good if you are relying on gluten free breads and pastas.

These products are often made from grains like rice, oat, and quinoa and may contain even more carbs than traditional wheat products.

If youre looking to maximize your gut health and steer your blood sugar into a healthy range, skip the gluten free diet and go a step further by adopting a totally grain-free diet. It will not only help your gut health but also benefit blood sugar levels too.

Most of the carbohydrate in bread comes from wheat flour. To make low-carb bread, make your own, and try out some low-carb flours, such as:

  • Almond flour: a high-protein, low-carb alternative to wheat flour.
  • Coconut flour.

  • Oat bran bread 1 slice 30 g = 11.9 g carbs, 1.4 g fiber, 10.5 g net carbs
  • Buckwheat bread 1 slice 47 g = 20 g carbs, 2 g fiber, 18 g net carbs
  • Sourdough wheat bread 1 slice 57 g = 29 g carbs, 3 g fiber, 26 g net carbs

One slice of bread is considered one serve, or one carb count and is around 15 g carbs on average.

While thats not too bad, if you can keep your carbohydrate intake lower overall each day, youll be better off for it meaning, yes, cutting traditional forms of bread can help diabetes you will see lower blood sugar and A1c levels.

This might not be the same opinion that you read elsewhere, or even the guidelines your dietitian might give you. Often they say 30 or 45 g carbs per meal is fine, some of them even recommend up to 70-80 g carbs per meal. But in our experience, many people with type 2 diabetes and prediabetes get the best results when they stick to eating that many carbs per day, not per meal.

What Is Sourdough Bread

It is actually bread that goes back thousands of years in terms of the techniques that are used to create this product. The unique taste comes from the result of the lactic acid created by the bacteria which is used to ferment the dough itself. By combining yeast with bacteria inside flour paste and water sourdough bread is created. While some of it is used to create a loaf of the bread, the rest is stored so that it can grow and be used again.

Interestingly, the acid that is produced by the bacteria that makes it a good choice for those who suffer from diabetes as there is not the same blood sugar spike that is normally found when eating processed white flour even when mixed with whole grain flour. This means that sourdough bread does make for an excellent choice when it comes to the diet of those with diabetes and anyone who is concerned about their weight issues as well.

There are several different bonuses that can be enjoyed when eating this form of bread. However, one of the most interesting is that people who have gluten intolerance issues can consume sourdough bread more regularly and without the impact of white flour thanks to the use of specific strains of bacteria. It must be noted that those who are lactose intolerant cannot just eat a lot of sourdough bread and not worry about it having any effect. Still, it is easier to digest than its white flour counterpart.

I am just not a bread hound. I don’t eat it much. The idea of toasting it for a sandwich might work though…with a little cheese or something. Which one do you like best? I use Ezekiel with 1 tablespoon of Jiffy with low sugar but extra fiber ..for snack at 200 calories, very low sodium, etcI found new breads put out by Pepperidge Farms: Whole grain Oatmeal with 4 gm fiber, lo sodium, lo fat, no corn syrup and is approved “whole grain” symbol..at 100 cal, and 20 Gm carb/3 gm sugar for one piece and is delicious ..I do alot of open face sandwiches with veggies on top! I did a check on my blood sugar before lunch and it was 80!! after lunch an hour 120. So looking good! And I can have my grains and not feel starved. Thanks, I really should try it again. It’s just hard to shell out $5 for a loaf of bread. Have you tried to make your own? yes, and funny you should ask, I brought out my own recipes yesterday. At our inns, i made it quite often..and different breads depending on the needs of our guests. It was really fun but I love bread so, I have to watch how much I keep around here , because it is so much better than store bought. 🙂 If you like, I could put a few on to see what you think?! Sure. I love to make home made bread. The family enjoys it. I just bought a bunch of yeast…a whole bunch. Not really sure what I was thinking. LOLContinue reading > >
