How to make a Diabetic Vanilla Almond Pound Cake

Use your favorite 1:1 sugar substitute.

In the frosting, you will need to use powdered, or else your creamy frosting will be quite grainy and unpleasant. For the cake batter powered is preferred over granular.


If you dont have powdered erythritol or xylitol and only have granular, go ahead and give it a blast with a high-speed blender, or food processor. My favorite powdered sweetener by far is So Nourished Monk Fruit Blend, I find it has almost no aftertaste at all.

Swerve and stevia will work perfectly fine here as well as does any powdered erythritol or xylitol.

Just remember, xylitol is poisonous to dogs and cats, so if thats your choice and you have little furry friends running around, it can be deadly to them.

If youre focused on a sugar-free, low carb, or gluten-free diet, things like this sugar-free birthday cake are hard to find and come by. This is unless of course, you live in a major city where you can find a bakery that specializes. Not where I am!

This from-scratch recipe isnt at all difficult and can be frozen in advance. Yup, you read that right, bake up a few layers, toss them in the freezer and pull them out when you are ready to work with them. Win-win-win.

Just a quick note, when the ingredients are mixed together, the batter will feel a bit thick. This is perfectly fine. The cakes still bake up quite moist and tender.

Sponge cake got it’s name because, of course, it resembles a sponge.However, while you can eat a cake, you cannot eat a sponge. Except if that sponge is a sponge cake.

A sponge cake is a pretty basic cake.A basic sponge cake has eggs, butter, flour along with a few other ingredients. Many sponge cakes are made without any leavening agents. However, in this recipe we will be using baking powder. Baking powder will help give our cake a lighter yet, more voluminous cake which is generally better looking than the sponge cake that has no baking powder added to it.

Why Do You Put Coffee In Chocolate Cake

This cake recipe calls for a cup of strong, hot coffee. Coffee enhances the flavor of chocolate cake. It will not taste like coffee, so even if you dont care for coffee, youll still love this cake. Trust me! If you really dont want to use coffee, you can use water instead. It will affect the flavor slightly, but the texture will still be good.

Sugar Free Chocolate Mousse Recipe

This diabetic cheesecake recipe is made easy with a sugar free cake mix and sugar free frosting.


  • 1 Package Sugar Free Pillsbury Devils Food Cake Mix
  • 1/3 Cup hot water
  • ½ Cup unsweetened chocolate chips chopped in small pieces

Preheat oven to 350F degrees.

Grease bottom only of 9 inch spring form pan.

Combine cake mix, hot water oil and egg blend by hand with a spoon.

Spread mixture into prepared pan bake 20 to 30 minutes until set.

DO NOT OVERBAKE set on rack to cool completely.


Run knife around edge of pan to loosen cake from sides DO NOT REMOVE SIDES.

In large bowl beat cream cheese until smooth blend frosting in until smooth.

Reserve 2 tablespoons chocolate chip pieces for garnish stir remaining chips into frosting mixture.

In small bowl beat whipping cream until stiff peaks form reserve 2 cups whipped cream.

Fold remaining whipped cream into frosting mixture spread over cooled base.


Cover with plastic wrap and refrigerate at least 3 hours.

Remove sides of pan garnish top with remaining whipped cream and chocolate chips.

Store in refrigerator.

Sugar Free Chocolate Sponge

Add all ingredients to blender and blend until smooth. You may need to scrape the sides a couple of times and blitz again.


Tip: By adding the wet ingredients FIRST and the dry ingredients SECOND, you avoid the flours sticking to the bottom.

You may need to scrape the sides a couple of times and blitz again.

Fill the batter into two generously greased non stick baking tins .

You can also line the sides with baking paper if you worry about the batter sticking!

Bake for about 35 minutes or until you can insert and remove a skewer without any crumbs sticking.


Do not over-bake as the sponge will firm up as it cools.

Can I Just Use Coconut Flour

Diabetic Cake Icing Recipe : Diabetic Recipes

No. This is not the ideal recipe to experiment with this because of the amount and cost of ingredients.

As a rule of thumb, I would use ̢ the amount of coconut flour stated for almond flour Рabout 80 grams / a scant ̢ cup. But I think you would also need to add about 2 additional eggs to achieve the same fluffiness.

How To Make A Beautiful Layered Diabetic Vanilla Cake

To make the layers of this diabetic cake, I recommend baking 2 small vanilla cakes instead of slicing a bigger one. It means you repeat the entire low-carb cake recipe 2 times.

This is the best way to create a lovely keto sponge cake with even layers and a decent cake height.

Frosting Tips And Tricks To Get It Perfect The First Time

Also make sure to grab whipping cream, not coffee cream.

I like to use a 36% fat whipping cream for this recipe, but if you cannot get your hands on 36% whipping cream, any cream that you can whip will be perfectly fine.


Keep all the ingredients for your icing cold cold cold, you want your cream cheese to come out of a cold fridge and go directly into the bowl. Cube your cream cheese first to make it easier on your mixer.

The frosting gets a bit stiff in the fridge but has a very similar mouthfeel to buttercream without an overly sweet bite.

I only add 1/2 cup of sweetener which makes for a slightly sweet frosting, if you want it punchier and super sweeter, add more sweetener!

Be careful to not overbeat your mixture. Overbeating will cause everything to liquify.

How To Make Low

This simple recipe only takes about 15 minutes to prep. Then, all you have to do is throw it in the oven!

Step 1: Preheat your oven to 350 F and line a small loaf tin with parchment paper.

Step 2: Add the butter and erythritol to a large mixing bowl. With an electric mixer, beat on high until light and fluffy.

Step 3: Beat in the eggs, two at a time, until well incorporated. Next, add the vanilla extract and beat on slow until mixed in.


Step 4: Add the almond flour, baking powder, salt, psyllium husk powder, and xanthan gum, then mix well. The dough will be quite thick but should not dry out.

Step 5: Spoon the dough into the prepared loaf pan and smooth over the top.

Step 6: Bake for about 50 minutes or until a toothpick inserted into the middle comes out clean. After 30 minutes, if the top is browning too quickly, cover the loaf with foil to prevent burning.

Step 7: Remove from the oven and allow to cool completely.

Once the pound cake loaf has cooled, its ready to be sliced and served!

How To Prevent The Almond Flour Cake From Sticking To The Pan

Usually, keto cake batter made with almond flour sticks a bit more to cake pans, so it is crucial to use a non-stick high-quality, aluminized pan.

It may sound expensive to invest in a high-quality pan, but they last for years. The one below is in my kitchen for 7 years, and none of my cakes stick to it.

Pan choice

I am using a 9-inch cake pan with a non-stick coating, removable sides that clamp around the base, and ridged texture at the bottom.

Pan preparation

If your pan doesnt have a ridged texture, your cake may stick slightly at the bottom. To prevent your keto cakes from sticking to the pan, I recommend a double-greasing method.

First, grease the whole pan, bottom, and sides with butter or coconut oil. Then, cut out a piece of parchment paper, the same diameter as the pan, so here a 9-inch circle.

Place the piece of parchment paper at the bottom of the pan. It will stick to the pan since you grease it before. Finally, grease the whole pan again, including the paper.

This 2-step greasing method will ensure that your keto cake does not stick to the pan.

Baking With Diabetes And Coeliac Disease

If you have coeliac disease, you can still enjoy baked treats. Theres a good range of gluten-free flours and other alternatives available in large supermarkets or health food shops. Youre no doubt aware that youll need to be very careful to read the label on baking products.

You can buy self-raising, gluten-free flour specifically designed for cakes. Use this in place of wheat flour in your recipes, but youll need to add a little more liquid, such as skimmed milk or water, or it will be too dry. Refer to the packaging on the product for more information.

  • 100 g butter at room temperature
  • 125 g of flour for cakes
  • 125 g normal flour
  • 2 eggs
