A Bit About Saturated Fat

The most controversial thing about dairy is the saturated fat content.

Saturated fat has historically been deemed the type of fat that clogs your arteries. Examples of foods that contain saturated fat include red meat, eggs, butter and of course, cream.

For years a low fat diet has been the default treatment for diabetes. This means eliminating things like butter and cream has been commonplace.;

However, in recent years more research has come to surface that tells us that eliminating saturated fat is not necessary, and in fact, consuming saturated fat from dairy does not appear to increase your risk of disease, including heart disease. ;

Interestingly, research suggests heart disease risk increases when you consume a lot of processed foods. Primarily its the pro-inflammatory trans fats and other highly processed fats that are responsible for the development of inflammation and cardiovascular diseases. And in terms of cholesterol, eating fat does not necessarily clog arteries this is a myth. The build up of cholesterol is promoted via inflammation in the vessels.

Besides the basics the ingredients in any given ice cream will vary from brand to brand.

For example, here are the ingredients in a tub of Breyers Natural Vanilla ice cream:

In the case of a high sugar content, it’s usually better to have fat in there as well, in my opinion, but fat does increase calories and for me, calories are what count in weight management. Well both of them are primarily sugar, so neither is a good choice on a frequent basis. However, ice cream is made with cream while sherbet is made with milk, so sherbet has less fat. I think sorbet is usually best – it’s usually made from real fruit, where sherbet I don’t think usually has real fruit in it. Read the labels though – see how many calories per serving, and how much sugar and/or fat, and make sure you watch your serving sizes. Sherbet is probably better than regular ice cream. This ice cream tastes amazing and hardly impacted my blood sugars, but unfortunately, the consistency is beyond odd.

A lot of the keto ice creams you have to leave out for 10-15 minutes before they soften up and assume the texture of regular ice cream. I did leave this one out but it only had two consistencies, rock-solid or melted, no in between, making it an interesting experience to eat.
