  • In creating and experimenting with this recipe, I found that while you could simply use oat flour and water to create a plain oatmeal dough for the tortillas. Adding a few extra ingredients, some salt, baking powder, and oil gives them an extra little flavor.
  • If the dough is too sticky, add more flour. After the ingredients are initially mixed, you may find it easier to begin kneading the dough and adding extra flour in until it doesnt stick easily to your hands.
  • Roll dough on a floured countertop, or consider rolling on parchment paper with a bit of oat flour to help prevent sticking to the counter.
  • These tortillas only need a few seconds to cook for about 20 seconds. If you overcook, they will break easily and not be so pliable. You want them pliable if you want to roll them into a burrito.
  • Too much oil will also cause them to overcook and not be so pliable.
  • Most importantly, enjoy them!

These oatmeal tortillas go great with my low-cholesterol breakfast burritos, which are delicious at any time of the day!;

What Is Almond Flour

Almond flour or almond meal is made from ground almonds. It is made by blanching the almonds with boiling water to help remove the skin, and then they are ground and sifted into a fine powder that resembles flour. This process gives a white, fluffy, and smooth texture.;

There is also unblanched almond flour, where the skin of the almonds is left on them and they are finely ground to flour.;

Almond meal is another flour substitute made from ground almonds. The difference is that almond meal is made from almonds whose skin is intact, and it has a consistency somewhat like cornmeal, as opposed to almond flour, which is more finely ground.;

Almonds have great nutritional value, as they are high in polyunsaturated fats- omega 6 fatty acids and vitamin E.;

A little background about the data

The Glycemic Index Foundation of South Africa has published The Smart Carb Guide in which they have tested GI values of flours. The diabetes council also seems to have some data on GI of some flours.

Most GI values of flours seem to directly correlate with the net carbs in the flour. So, this serves as an intuitive check the more carbs, less fiber in a particular grain, the higher the glycemic index and better to avoid/reduce our use of them.

Using These Flours Is Even Better

BUT, as suggested above, even whole grains can be problematic for people with diabetes. So we only use almond flour or almond meal, coconut flour, ground flaxseed meal, sesame flour, and other nut flours in the majority of our low carb breads and bakes.

On the odd occasion, we use a small amount of normal flour such as arrowroot or corn flour, just to thicken sauces, which can be difficult to do with low carb flours.
