Vinegar has been used for millennia as a food, drink, medicinal, preservative, and disinfectant. Fruit juices are fermented with yeast into wine, which is further fermented by acetic acid bacteria into vinegar. Various types of vinegar are made from apples , grapes , cereals such as barley , sugar, and other products. Distilled vinegar is made from dilute distilled alcohol.

The US Food and Drug administration requires products labelled “vinegar” to contain at least 4% acetic acid. Cider and wine vinegars contain 5% to 6% acetic acid; white vinegar ranges from 4% to 7%.


Vinegar has been used as a folk remedy for various conditions, including hypertension, weight loss, leg cramps, osteoarthritis, cancer prevention, jelly fish stings, and warts. Before the availability of pharmacologic glucose-lowering therapy, vinegar was used as a home remedy for diabetes.

The limited available research suggests that vinegar taken before a meal may lower blood glucose from 20% to 33%. The response may depend on the type of glucose loadthat is, a more pronounced response with a high-glycemic vs low-glycemic meal or glucose-containing beverage.

Where does ACV come from?

Vinegar comes from the French phrase vin aigre, meaning sour wine. The sourness comes from the acetic acid. Making apple cider vinegar entails taking advantage of controlled-spoilage.

Yeast digests the sugars in apples and converts them into alcohol. A bacteria, acetobacter, then turns the alcohol into acetic acid. I dont want to get too technical, but you can call this process fermentation. The mother refers to the combination of yeast and bacteria formed during fermentation. Many people attribute apple cider vinegars effects to the mother. Theres some truth to this since the mother counts as a probiotic. But, the importance of the mother has not been established with research. Aside from probiotics, ACV has a vitamin profile similar to apple juice. Hence, the sour drink is ripe with B-vitamins and polyphenols .

Dr Johnston And Her Team Reported Several Significant Results:

  • Each of the three groups had improved glucose and insulin profiles following meals that started with the vinegar drink
  • In subjects with type 2 diabetes who drank vinegar, blood glucose levels were cut by about 25 percent compared to diabetics who drank placebo
  • In subjects with pre-diabetic conditions who drank vinegar, blood glucose levels were cut by nearly HALF compared to pre-diabetics who drank placebo

And heres the most surprising result: Pre-diabetic subjects who drank vinegar actually had lower blood glucose levels than subjects with normal insulin sensitivity who also drank vinegar.

Five Ways To Incorporate Vinegar Into Your Meals

Have a vinegar-based salad dressing before you eat. This may be especially helpful if youre planning on having a carbohydrate-rich meal. One study showed that when people consumed 1 ounce of white vinegar with a meal of bread containing 50 grams of carbohydrates, it lowered post-meal glucose spikes and insulin levels.

Another study of healthy people found that eating 100 grams of sliced lettuce dressed with olive oil and vinegar before consuming 50g of white bread carbs experienced significantly lower blood sugar compared to those who ate the same amount of salad dressed with olive oil but no vinegar.

Interestingly, the study authors also compared the vinegar group to a second vinegar group in which they added sodium bicarbonate to the vinegar to neutralize its pH. The scientists found that the neutralized vinegar did not affect blood sugar, suggesting that vinegars acidic nature plays a crucial role in its ability to modulate blood sugar.;;;


Drizzle vinegar over steamed or roasted veggies. It turns out even a small amount of vinegar consumed with meals can help control blood sugar, too. One study found consuming two teaspoons of vinegar with carbs may reduce post-meal blood glucose levels as much as 20 percent. Bonus: the study also found that consuming vinegar with a high-carb meal also increases satiety.

How To Consume Acv For The Most Benefits

High Blood Sugar And Diabetes

High blood sugar is closely linked as both a cause and effect of diabetes mellitus, commonly referred to as just diabetes.


Diabetes is a condition wherein the body does not produce insulin , or where it does not appropriately respond to insulin . Prolonged and recurrent high blood glucose can lead to a diagnosis of diabetes, a condition that can lead to organ damage in the eyes, kidneys, nerves, and cardiovascular system. 12

One of the most powerful claims made about ACV is that it can improve insulin sensitivity and reduce high blood sugar. If this is true, ACV could greatly benefit those who consume it especially those who are prediabetic or have type 2 diabetes. Studies that support the claims that ACV influences blood sugar tend to be small, but have promising results.;

1. One study focused on people with type 2 diabetes and found that those who drank diluted ACV before consuming a high-carbohydrate meal had an increase in glucose uptake by their muscles compared to those who took a placebo.


2. Another study found that ACV ingestion before a high-carbohydrate meal was able to raise whole-body insulin sensitivity in people both with and without insulin resistance.

3. It has also been found that vinegar can moderate waking glucose concentrations in adults with well-controlled type 2 diabetes.;

How To Take It

Since ACV is a vinegar, it can cause nausea and upset stomach when taken undiluted. Plus, a little bit goes a long way. Most studies only use about a tablespoon of ACV to determine the effects.

To help counter the stomach problems, try mixing a tablespoon of ACV with a glassful of water. Drink it right before you eat each meal to reap its blood sugar control benefits. If you find that the taste is still off-putting, you might mix in a little artificial sweetener or honey.
