Sugar Free Does Not = Carb Free

Most sugar free cookies, ice cream or puddings contain artificial sweeteners and/or sugar alcohols. It is important to understand the differences. Sugar, whether it is brown, white, granulated, powdered or syrup , contains 15 grams of carbohydrate per teaspoon. Artificial sweeteners, such as sucralose, aspartame, saccharin, acesulfame K, do not contain carbohydrate or calories. Their safety concerns and long-term health effects are debatable and not fully understood.

Sugar alcohols, including sorbitol, mannitol, xylitol and other, do contain carbohydrate and need to be included in the total carbohydrate count of meals or snacks. Sugar alcohols have been known to contribute to gastrointestinal side effects, especially gas and diarrhea. The take-home message here is that foods labeled sugar free on the package are not necessarily carbohydrate free.

If youre a fan of meat and cheese boards, why not include low-carb crackers that are also made of cheese? You can slather on soft cheeses, layer on hard cheeses, and throw in some salami or prosciutto to top it all off.

These crackers are also excellent for dipping. I love serving them with a simple sour cream and onion, but theyd also be great with salsa or guacamole.

How To Make Keto Cheese Crackers

Diabetic Low Carb Crackers Recipe

This simple recipe comes together in just 10 easy steps.

Step 1: Preheat the oven to 425°F and cut two sheets of baking paper to about 18in x 13in .

Step 2: In a large microwave-safe bowl, add the cream cheese, parmesan, mozzarella, and almond flour.

Step 3: Cook in the microwave in 30-second increments, stirring between each one, until the mixture is melted and very soft. Remove from the microwave and mix until smooth.

Step 4: Add the egg, rosemary, onion powder, garlic powder, and sea salt. Mix well and shape into a rough ball.

Step 5: While the dough is still warm, place it in the middle of one sheet of baking paper. Lay the other sheet on top, then roll out the dough evenly to the edges of the sheet.

Step 6: Remove the top sheet of baking paper and transfer the dough to a large baking sheet. Trim any rough edges or overhanging dough.

Step 7: Using a pie crust cutter, cut the dough into 1in x 1in squares. If using, sprinkle coarse sea salt on top.

Step 8: Bake the crackers for 25 minutes, checking them at 20 minutes to make sure they arent getting too dark. If theyre browning too much, cover with a sheet of foil for the rest of the baking time.

Step 9: Remove from the oven and allow to cool for 10 minutes on the baking tray.

Avoid Starchy And Sugary Snacks

Your body converts foods that are high in starch or sugar into glucose immediately after eating, which can cause a quick spike in blood sugar levels. This can also lead to a large drop in blood sugar later, Stephens says.;

Ideally, you want your blood sugar levels to be as stable as possible it’s the sharp swings that can cause health problems. But starchy and sugary carbs do just this.;

Starchy carbs include white bread, white rice, pasta, and potatoes. Sugary carbs include fruit juices, sweets, chocolate, and desserts. Overall, Stephens recommends avoiding the following:;

  • Fruit juices ;
  • Dried fruit ;
  • Pastries
  • Cakes ;
  • Muffins ;
  • White bread ;

For people with diabetes, the Joslin Diabetes Center recommends 40% of daily calorie intake should come from carbohydrates.

Stephens recommends people with diabetes should aim for about 15 to 30 grams of carbs per snack and about 120 to 150 grams per day depending on how much physical activity they do, whether they want to maintain or lose weight, and other health factors.;
